In which I make truffles!

You Need:
300 ml double cream
50g unsalted butter
280g good quality dark chocolate (70% or more ideally!)
2 tsp caster sugar
1 tsp vanilla extract
And to decorate/taste: Rum, cocoa, and orange, and other decorations!
I made these around Christmas time, completely forgot I was planning to blog about them, and then found the pictures in a random folder in my laptop, so thought I’d share!

Break up your chocolate into smaller chunks (try not to each too much!) and put it into a metal or glass bowl, not plastic! Then pop your butter, sugar & vanilla extract in a saucepan…

Add the cream in and switch the hob on on a low heat and stir constantly, don’t let it boil! Keep stirring and once it becomes a smooth mixture…

Pour it over the chocolate pieces, and get stirring! Keep on stirring until the mixture becomes lump free and like you want to literally just spoon it right into your mouth. Depending on how many flavours you plan to make, separate your mixture into equal amounts (I chose to make 2 flavours)

For the rum, I added 2 tablespoons of dark rum, and they were potent, so perhaps too much! For the Orange flavour, I literally just squeezed the juice of a small orange into the mixture and gave it a good stir! Pop your mixtures into the fridge for at least 4 hours, or overnight if possible!

Prepare some cocoa powder in a dish, along with any other decorations you’re going to use (I chose chocolate flakes and white chocolate stars)

Now for the messy bit, run your hands under a cold tap for a bit to cool them down, then scoop out a glob of the mixture and attempt to roll it into a neat ball (harder than it sounds!) then plop it in either the cocoa or whatever else you want to decorate them with!

My attempts are not the neatest but they did taste bloody awesome! I left them on a greaseproof-covered baking tray before transferring them to little boxes so I could give them to people (although I ate at least half myself)

    Those look soooo yummy. Love getting my hands messy so this looks like something I would try. I would definitely end up eating half the mixture though, haha!
